A recipe for you…. for paleo people :)

Apple Shallot Pork Chops

I have made these a few times. Josh and I think they are pretty good… and Ainsley likes them also. I give it to her minus the almonds (choking hazard)

You need:

1 Apple

2 Shallots

5 Tablespoons of Coconut Oil

Cinnamon and Sea Salt

4 Pork Chops(thick)

1/4 cup white wine

Slivered toasted almonds

Ok, and now for the recipe!

Slice the shallots and apples thinly. Add them to the large skillet, with 4 tablespoons of coconut oil. Saute for 5 minutes or until the apples are tender but still a touch crisp. Remove them  from the pan and then add the last tablespoon of coconut oil. Generously sprinkle cinnamon on both sides of the pork chops and lightly sprinkle sea salt if desired. Put pork chops in the pan and sear for 2 minutes each side. Add the wine and bring to a boil to cook off the alcohol. Add the apples and shallots back into the pan, cover and cook on medium hear for another 6-8 minutes (depends on the thickness of your pork chops). Serve with slivered almonds sprinkled on top.

Blueberry Muffins… Paleo Style

I know I missed a few days on my blogging. I have been lost in the world of wedding albums, new samples/displays, chasing a 1 1/2 year old… and being a good wife (at least trying)…

A book that I am reading, which I plan to share a little blog post about has challenged me to be a better wife by…. putting my husband at the top of my priority list. Probably sounds silly…. but on a day to day basis, it is really easy to take care of Ainsley…. take care of my clients/business…. and then give my hubby my leftovers (which are generally sparse)…. Saying that out loud actually sounds really terrible…

This author basically says, that if you make your man a priority, he will slay dragons for you. Sexy, huh? :) Well, I am finding that to be true! For the past several weeks, I have tried to make my husband my priority of the day… which has mostly revolved around food. Making him dinner each night, iced coffee in am… and packing him lunches….. and as silly as it might sound… the last few weeks of our marriage  have been totally amazing! All because I took some time to put him first and let him know how much I love him and appreciate his hard work… Simple, yet amazing. It might seem like a no brainer to you…. but it has been very easy for me to slowly let other things become my priority…. but enough about that! I will share the life changing (yes,  I said life changing) book with you in another post this week. So you’ll have to come back to read about it…

This post is actually to share one of the awesome recipes that I have discovered on my new…trying.to.be.a.better.wife.adventure.

Blueberry Muffins…. b/c everyone loves them….

And this recipe is Paleo! What’s Paleo?

And I made a few adjustments….

Here is what you need:

3 Eggs

3 T melted coconut oil

3 T raw honey

1/8 t almond extract

1/4 t sea salt

1/4 C coconut flour

1/4 t baking powder

1/2 C fresh blueberries

Preheat the oven to 400. Melt the coconut oil. Blend all ingredients except for the blueberries on high speed until smooth. Add blueberries. Pour the batter into muffin tins. Bake for 16ish minutes. Voila! Paleo Blueberry muffins!

Here are my changes/additions:

*I added cinnamon to the  mixture… probably about a teaspoon? Didn’t measure… just kind of put it in there :)

*I added double the blueberries.. b/c blueberries are amazing and a family favorite!

*I sprinkled unsweetened coconut flakes on the top for the prettiness factor :)

So here you go…  Paleo Blueberry Muffins.

Paleo What?

You may or may not know what eating Paleo is…. and I will be sure to share some more info with you about it over time. We haven’t always eaten this way but slowly transitioned to this new way of eating and are loving it. We aren’t 100% all of the time, and you’ll find us “cheating” the most on the weekends, but here is the short version of how we started eating this way, and then a paleo recipe for you to try!

We met at a gym in Baltimore… We started doing kettlebells…. We got into Crossfit…. Lots of crossfitters eat Paleo…. did some reading, and decided it was the way to go! We feel the best we’ve ever felt and we are pretty much the strongest we’ve ever been. :)

So, with that said, here is a pic of the Paleo Lasagna that I made one evening….  Love that the vegetables make it colorful!

And now for the recipe, which I got from Everyday Paleo. Awesome recipe book and blog!  Check it out!

I made a few changes… but here you go!

1 red onion (I used a sweet onion)

4 cloves garlic, minced

2 tablespoons extra virgin olive oil

1 lb ground beef (grass fed if possible!)

1lb mild italian sausage

2 tablespoons dried  oregano

1/2 cup fresh basil, chopped

1/2 teaspoon cayenne pepper

1/2 teaspoon sea salt

1/2 teaspoon black pepper

1  (14 1/2 ounce) canned tomatoes, juiced drained (I used fresh tomatoes, lots of them)

1 (6 ounce) can tomato sauce (I skipped this b/c I just read this article)

5 zucchinis, thinly sliced long way

1 cup sliced black olives (skipped these)

*I added roasted red peppers as well (make sure there isn’t any sugar) as well as diced yellow squash

 

1. Preheat the oven to 350

2. Saute the onions and garlic in olive oil for 3 minutes

3. Add ground beef, sausage, and brown

4. Season the meat with the dry ingredients, add tomatoes & tomato paste, mix well

5. Layer zucchini in 9×11 baking dish, then add meat mixture, and top with black olives, then layer zucchini, and them meat again…

6. Cover with foil and bake for 30 minutes, let it sit for 10 and then serve!
